Default Is abandoning the Holy Land...

And setting oneself up in the Rebel areas in Greece and such a good alternate strategy for the Crusader States?

Ive read that that is a possible strategy, i guess you will want to keep Cyprus as the centre of everything while you travel to Greece and settle and keep as the most eastern province later on.

it's a fun strategy, but obviously not the best one.
I've done it a couple of times, try to get an alliance with the Egyptians and if you are lucky (happened to me once),
the Turks attack antioch and throw the Levant in an allconsuming war between Egypt and the Turks. =D
Meanwhile I had Greece, Constantinople and all the starter Byzantine territories and i only lost the castle under Antioch :p
