Sounds like your having problems no matter which faction you play as!
On a more serious note...for your question I'm not sure the file you would edit, but you could lower the unit scale in game options...however that would also lower your troops as well. You should just see it as a challenge and beat them anyways!![]()

export_descr_unit in your data file. Find the unit and change the number of troops or reduce their strength. Back up your files first. Read the info at the top to find where to make the edits.
For balancing reasons you may want to reduce the cost of the Arab Militia if you end up reducing their number/stats. Here's a guide to the EDU so you'll know what all the numbers mean!

Geez, you have quite a lot of elite heavy cavalry, quality javelinmen and a least decent urban militia and you're trying to utilse reliable spearmen with light men at arms ??No wonder you're getting your butt kicked LOL! Get a proper army composition!! Leon & Castille is one of the easiest faction!!

Use your heavy cavalry to attack them in the flanks, don't try to fight them head on.
The javelins that are so prevalent throughout the Iberian rosters are very, very effective when used on the flanks of spearmen and against cavalry. And the elite units are also very handy in close-combat, so you won't feel like you have a completely spent unit once the ammunition runs out!
Your cavalry, as the other posters have mentioned, aren't anything to snuff at either. They aren't knights so don't go charging them into infantry lines, but they will cause a rout with a few well-timed volleys of high-velocity ap javelins into the backsides of an arab infantry line.
And uh...remember to get a Crusade call in Iberia... cheap knights, atleast until the crusade ends.
