You go under "programs/stainless steel" if thats where you keep the game program (Mine is under my start menu) , and "run setup".
That will let you change options including early or late game.
Any saved games you have will still be there if you decide to switch back.

You can use the "search" function on the right side of the top navigation bar (ok, it takes some practice to find what you are looking for), which could have revealed this thread:
