If you can fit it, here's a breakdown of Japan. If not, don't worry about it. Those are the medieval provinces which existed during the frame of your mod. Shogun 2's map is accurate AFAIK.

However it's important to note that the provinces are huge and should have several constituent counties. My map I uploaded with China that is colored is pretty accurate. I combined some of the counties but still left several counties per province. China is stupidly huge and that's the reality of it. If not for the stability of the Ming Dynasty, you could make an entire game just on Chinese territory. China is bigger than Europe and modern China although larger than Ming China is smaller than Qing China which was basically the entirety of Asia proper. The weakness of Ming is that it's so large you can't do much besides administrate the territory you already have.
Your map is quite a bit larger than mine, so you might be able to get away with 2-3 game provinces per historical Chinese province.
