After beating every campaign on each difficulty, i would say hard. It has enough difficulty but doesn't give the ai ridiculous bonuses.
Normal, because changing the difficulty doesn't actually alter the AI's difficulty, it just gives it major buffs. I want to fight the AI on equal grounds as far as economy and stats go, and difficulty change to me is the AI being "smarter" about what it does, not just steamrolling me over with stacks.
For that reason, normal is all I play on.

VH, offset AI's bonus by occasional quick reloads/saves. But I dont reload when my high star agents/generals got assassinated, it cheapens the game.

Meh, I get stressed waaaay too easily, I play campaign on easy (bows head in shame) and battles on medium/hard difficulty setting, depends which faction I am playing with I guess.

You should include split difficulties for campaign/battle in your poll.
I play hard or very hard campaign, normal battle. I do play with an overhaul mod, typically TRoM.
Rationale: Campaign handicaps on harder difficulties will lead to extra casualties through attrition. Artificial battle difficulty makes planning for that challenge needlessly unintuitive and unrealistic.
Very Hard since the AI is still not smart whatever option I use. Rare ambushes and just spams of cheap units.
VH since on normal the campaign AI is not able to mount any challenge whatsoever. H difficulty campaigns turn into very easy too fast as well (as soon as the player establishes some reasonable economy). True, on VH the AI stack spam can get tedious, but, at least, the map of Japan (unlike ETW map, for example) allows for easy, defensible, choke-points. To be honest though, I've been wiped out by the AI on VH when I tried Shogunate factions. Have yet to see that with the imperial ones.
Why not legendary some might ask? I like my radar map and the free camera.
I play no mods for S2, BTW.

Normal campaign/ very hard battles, unlike the majority if not all the "pros" that play on very hard/legendary I don't fool myself into thinking I can win a campaign without cheating. A guy above mentioned he reloads his saves ROFLMAO that's easier than playing on easy difficulty.
I play on hard. Its more difficult than normal (if only because of buffs/debuffs and not AI changes), but it doesn't degenerate into you staving off endless stacks from all directions.
So if you play anything higher than normal (campaign), the AI gets the unfair bonuses? I'd like to see that addressed for Rome 2.
What's the point? The only time I reload a save is if it's very early in the campaign - usually the first battle, if it all goes tits up.Normal campaign/ very hard battles, unlike the majority if not all the "pros" that play on very hard/legendary I don't fool myself into thinking I can win a campaign without cheating. Easy. I suck at video games even though I love them.
I am Sam, Sam I am. Do you like green eggs and ham?
How do higher difficulties affect the battles? I'm sure it doesn't make the AI better, so what are we looking at here - higher hit points or something? Morale bonuses?
The trouble is, I think I'll just blitz campaigns if I play on normal/normal.

Personally it depends the clans and the type of Shogun ( Sekigahara , vanilla , Fall of the Samurai , Rise of the samurai ) and whether i want to complete the campaign objectives or have fun differently roleplaying with only a few regions , ideally just 2-3 regions fully developed and fight distant wars with vassals and allies
I voted hard cause that's the difficulty i use the most often with normal difficulty .
In FOTS i played several very hard campaigns with some "easy"' clans ( Saga , Tosa , Satsuma ) , but the downside of hard and very hard is that the CAI can get really crazy sometimes , so desperate to add artificial challenge to the player that often there is no real diplomacy possible for long periods of time and some factions like Satsuma can turn pro-Shogun , or Jozai , Edo or Matsumae turn pro-Imperial which is the biggest history immersion killer you can ever imagine in the Boshin war .
That's a pity i have to pay this heavy price for a bit more challenge in gaming terms , since in normal difficulty such ridiculous developments almost never happen which is why i sometimes revert back to normal instead

That´s the main reason why I usually play mods. CA could never make a rational and proper hard mode level with reduced cheating. If at least diplomacy would work ok... But it doesn´t, and regardless of winning or losing the campaign, playing hard levels can be very annoying exactly because of the exaggerated amount of cheating involved in those difficulty levels. And medium level is too boring, I should say.

Normal on vanilla.
But Hard on Sekigahara. Why? Coz its supposed to be fast pace, this is the last stages of the Azuchi Momoyama and the Sengoku Jidai is kicked into high GEAR!!
THATS RIGHT! I'M REFERRING TO YOU MAEDA TOSHIEE AND YOUR OVERSIZED KABUTO AND OVERSIZED SPAM OF ARMIES. THERE CAN ONLY BE ONE DAIMYO WHO CAN POSSESS AN AWESOME KABUTO AND HISTORY AND THE RULE OF COOL/AWESOMENESS DICTATES THAT TIS AYE, DATE "DOKUGANRYU" MASAMUNE, OF OUSHU, WHO WILL TRIUMPH!
Spoiler Alert, click show to read:
*Later....reloads after Masamune died attacking Noto Province during the winter season and being caught in a Maeda Clan teppo.*
But whatever the case, I always put the battle mode on hard. Makes it more interesting.
(Its clickable by the way....An S2 overhaul mod.)
Seriously. Click it. Its the only overhaul mod that's overhauling enough to bring out NEW clans
