I'm just wondering why they decided to forget the mons for Tokugawa and Mori in MP? I especially like the Tokugawa and I wanted to use it for my clan banner but its not available.

You can always play classic mode MP which allow you to control Tokugawa and Ieyasu himself

But I mean like regular MP. As far as I know classic MP doesn't give points to the avatar campaign.

The mons are there for some of the clans. In fots, I've see Tokugawa, Mori, and Hojo.

Either case I think you can skin the current mon that you have to look like tokugawa mon without effecting MP
