How many grenades did these guys carry? Seems that if you want, you can go on chucking them forever. I know these guys were big strong men, but surely they couldn't carry this much ammo?

Yeah they have infinite ammo. I don't even think they used grenades at this time (only in the early 1700s I think), the term 'grenadier' was used to denote a tough soldier, like you described. I could be wrong though

Grenadiers did not use grenade any longer in the Napoleonic wars. It started declining as soon as early 18th.

So the unit is historically inaccurate then?

Yes indeed. I know some mods (like Darthmod) do remove the grenades and make grenadiers just pumped-up line infantry.

Yes, NTW is full of historical errors.
Like in the campaign France starts in 1805 with lancers, they were introduced in 1811 only
And they were neither steam sheaps nor armored ships during this time frame.

But these details can be corrected with mods relatively easily.

I reckon I might get hold of Darthmod NTW then - his mods have never let me down before.

The only reason why I keep them...

Well, they're sometimes just freaking awesome to use.
