After a while, i think you will prefer VH/VH (that's how i roll). And then, VH/VH will seem to you easy, too. It depends on how many hours you spend.
I usually just do M/M. I've played these games for a long time as well. I'm casual though. I also like things being a little bit balanced in diplomacy and what not. Additionally I use various mods and I think many of them have a recommended difficulty style, so I usually just leave it at default.

I play M/M. I'm still finding my way around this game so am not quite ready to move up. I'm also not a fan of frustration.

I would try harder , but I just hate bonuses. Especially battles. I mean , peasants beat up my Auxillias? GTFO

Why do you use auto-resolve? Battles in medieval 2 were the very first reason i liked so much total war (i played Rome afterwards). If your pc can handle them, then i don't get it.

But then you won't be able to see all these great ahistorical units in hidiously coloured armour.
I play it on Hard/Very Hard. Maybe it's just me but on Very Hard the game goes out of it's way to attack me, play as sicily end up with moorish armies landing on my shores, byzantines, got into a war with HRE, excommed by the pope (What a dick..) milan and venice then began sending armies at me, via fleet and land & HRE sent a full stack at me.
All of that in about 25 turns, though a fair few of armies without generals did rebel when they reached palermo, I lost naples shortly after i was excommed, manage to fight off the papal army, but HRE stack was too much. I'd play on VH/VH but yeah.
VH/VH with a few self-made rules (no siege engines (catapult,... but rams/ladders/towers... allowed of course), no assassination or sabotage (that's more funny when facing a general than a captain), no merchant, no fleets out of the ones for moving troops). I love long and painful campaigns.
H/H but I am thinking of moving up to VH campaign

Campaign usually M or H ( I like to keep it realistic, balanced and fair)
For battle I take H or VH in Medieval 2, M for any other Total War (Those bonuses for AI are way too artificial and unfair)
Gracul's AI in which even the rebels chase you off!VH\VH + BGR = Nose Bleeds!
If you want to play slowly then lowering the CAI helps while keeping the battle map difficulty to max.
M/M, because AI should play better and strategize, not just get more bonuses to frustrate the player. I know if I try beyond M/M at the moment, I'll become irritated.
Giving the AI bonuses/advantages to counterbalance it's idiocy is sketchy at best.
