    If you for example capture a moorish city with a caravan stop (or any building unique to a faction(s) ) do you get the benefits?

    seeing how capturing cities with race tracks allows you to hold races i'd say yes., you do. but i'm not entirely sure.

    Just depends on the building. Religious structures that aren't of your religion are automatically destroyed. This is true except in the case of the Dome of the Rock and some other particular buildings if you're using a mod. Those usually stay I believe. Also, I'm not sure but if you take Constantinople...I think that cathedral will stay even if you're catholic or Islamic? I may be wrong there.

    Everything else though, you'll still have. As for benefits...I'm not positive but I believe that the effects still take place.

    If you're catholic then the orthodox churches remain and you can't make catholic ones unless you destroy them personally. As Islamic faction though it's automatically removed.

    Nope, it could be true in some mods, but in vanilla they get destroyed and you start from scratch.

    Yes this is true, i didn't check that my vanilla copy was also modded.

    Yeah, Orthodox churches also get destroyed when captured by Catholics. I don't really like this aspect of the game, though, because historically, people converted churches all the time, like how the Haiga Sofia was converted to be a Mosque.

    It's actually possible to have both catholic and non-catholic churches together. The way to do this is to play as a non-catholic faction, and capture a catholic settlement with a masons guild. The masons guild will randomly build a catholic church for you, and it will remain in the settlement until the settlement changes faction ownership. This happens frequently in SS 6.4 where AI factions frequently build masons guilds.
