Poitiers from 732 was much better.
And the siege of Constantinople would be boring. 100000 against 8000. No way.
Well some battles such as Courtrai would be hard to reproduce in M2TW but I think it is a shame that there isn't an Historical Battles mod or DLC. There are some extra historical battles in the downloads section of this site, but the difficulty of using the battle editor has stifled most attemps to rememdy this situation.

Crecy was pretty similar to Agincourt, so they would be pretty much identical in-game, due to limitations on game mechanics.
They definitely should have included more from the Wallace vs Longshanks battles, and maybe added one in for the Spain/France vs HRE crusade?
Well, if one the smaller gates hadn't been left open during the Siege of Constantinople, the Byzantines might have had a chance to survive that siege. The walls of Constantinople were some of the strongest in the world, after all.

It would still be fun to play that siege, you could even give it a go as defending as the Byzantines.
Also, you should add the great siege of Malta in 1565 onto the list, though it might be a bit to far away from the time period. Still a legendary battle though. And the fall of granad (end of the reconquista) in 1492
Mehmed II was about to end the siege when a posters gate was opened for his army. Then his forces poured in and opened the main gate letting the whole army in and overwellming the last bastion of rome. So if the ERE troops intercepted them at the postern gate or it wasn't opened they would've won he siege.
