Hi there! I really enjoy Roma Surrectum II, and I was wondering, while trying to get back into Medieval 2, if there were similar mods to this for that game. You know, overhauled interface, music, more units, better mechanics, etc etc.

There are no mods for MIITW that go on the exact same timeframe as RSII. At least not yet, though you can wait for EBII which is bound to come out sometime in the next twenty years.
You can try the IB (Invasio Barbarorvm) mods that cover later roman timeframes. Or the Paeninsula Italica beta that covers the early Roman expansion in the Italy.
However if you want mods that are as awesome as RSII but not about romans then try Stainless Steel, which as of now is the best mod for MIITW, closely followed by Broken Crescent and the Third Age Total War.

Stainless Steel is very good.
I liked Stainless Steel and Broken Crescent; played both to the end. SS as England and BC as the crusader states.
I'd probably give a slight edge to BC because it's somewhat more difficult as a result of the regional recruiting system. Your best units are the Templar/Hospitaller knights and infantry which are only recruitable/retrainable in what were the historical crusader states. As your conquests get further from those, it becomes a substantial logistics burden. You always have a lot of crips and retrainees in transit.

Hmm..the only Romans I have played in a M2TW mod are in the 'Thera' mod which is a sort of mix-up of fantasy themed versions of historical armies plus some pure fantasy factions all on an archipelago type map. So you got Romans fighting against samurais and Uruks, a Germanic type pike and shot faction fighting against Dracula and Norsemen fighting Indians.
I know it sounds a bit daft but I had a lot of fun with it when I played it - it's well written, quite balanced and very stable.
