If you mean the beastmen temples and how they change names after you conquer them as the empire, I think is on the campaign_script file.

Just click on the city name in settlement scroll and change it.

imperial_campaign_regions_and_settlements_names in the data/text file, change only the part that is not between {}, that's the internal name for the game and if you change it you'll have to change descr_regions, descr_strat and descr_sound_music_types.
Yes, you could do that to rename your own cities to something fun.
Another way to rename enemy cities I did once, was use console to spawn some guys for you next to the city, take it and rename it. then Disband all your troops there so the enemy just walks in and takes it back. Kinda not worth the trouble tho imo
