Go into the "export_descr_unit.txt" and change the first number in the "soldier" line. See below what I mean:

Spoiler Alert, click show to read:
    type Knights Innercircle bodyguard
    dictionary Knights_Innercircle_bodyguard
    category cavalry
    class heavy
    voice_type General
    banner faction banner_innercircle
    banner holy crusade_cavalry
    soldier Knights_Innercircle, 12, 0, 1.5
    mount Elector count armored horse
    attributes sea_faring, can_withdraw, knight, command, general_unit, no_custom
    formation 1.5, 1.5, 3, 3, 3, square
    stat_health 1, 0
    stat_pri 9, 8, no, 0, 0, melee, melee_blade, piercing, spear, 0, 1
    stat_pri_attr no
    stat_sec 9, 6, no, 0, 0, melee, melee_blade, piercing, sword, 0, 1
    stat_sec_attr no
    stat_pri_armour 12, 6, 4, metal
    stat_sec_armour 3, 3, metal
    stat_heat 2
    stat_ground 0, -3, -4, 0
    stat_mental 16, normal, highly_trained, lock_morale
    stat_charge_dist 45
    stat_fire_delay 0
    stat_food 60, 300
    stat_cost 4, 1750, 350, 100, 100, 1750, 1, 1000
    armour_ug_levels 6
    armour_ug_models Knights_Innercircle
    ownership portugal
    recruit_priority_offset 10

Note: The limits of this number are 4 (minimum) and 100 (maximum). The unit scale in the Options menu will change them to varying sizes:

    Small - 50%
    Normal - 100%
Large - 150% or 200% (I will have to recheck this)
    Huge - 250%

So, for example, 100 would be 250 men on huge (100x2.5=250)

im actualy editing mine to have double the unit sizes, im avoiiong maxing unit sizes for balance and pathing issues during sieges will upload shortly.

lol just saw reiksguard bodyguard and had to double take coz i saw it as Reiksfart

EDIT: ok done, backup your EDU's just in case some info below

-based on warcry a submod that changes the EDU info can be found in its own thread under submods

-Sylvanian skeles have had an extra hit point added, this makes them more formidable, as empire troops now match them in size, orcs and goblins have been left the same however.

-mages are untouched ( SOMEONE PLEASE TELL ME HOW TO TOTALLY REMOVE THEM FROM THE GAME PLEASE)

    - all units have been effectively doubled many to the 100 limit as described by THP above.

    - this most likely unbalances quite a few things especially if you like to play orcs and goblins, and sylvanians are far more stronger so if you play them you'll have a easier time of it.

    - siege equipment is untouched they are powerful enough.

    - not entirely sure if these changes affect scripted armies, as im sure thats another file, testing to be done

    - lastly this is all PERSONAL changes that i want out of this mod, im not a dedicated modder so if you dont like something you have to change it yourself, its simple and if a dumbass like me can do it so can you.

REP if you like what you see! it motivates me!

This fails for me and I get the error 'Unrecognised mount type 'Elector count armored horse'.'

Yeah you resurrected a very old thread.. it was for V1.4 and I'm assuming you're using V1.5.1 of the mod.
