    Default Unique regional units?

Is there any way of recruiting unique regional units other than mercenaries? I'm talking about things like Flemish/Swiss pikemen. If there is, I'd assume you do it by conquering and developing the relevant settlement - I recall reading somewhere that if you conquer and English castle you can still build longbowmen there, for example.

yes, certain units are available to every faction, depending on the regions you control.
Norse archers, highlanders, lithuanian archers, kurdish javilinmen,... but those numbers are limited. e.g. you can get highlanders from Inverness castle, but not noble pikemen, and you can only recruit them at this region, not in London for example

Take the castle at Bern if you want to recruit Swiss Pikemen. But it has to be the right time period as well.
