creating armies
Curious if anyone knows how if it's possible to play an emergant faction by just adding an army for them. This way I can play it like they just emerged and take their first city.

I don't think so.
First of all, starting a game with an emergent faction will result in a CTD. Even if you add an army to that faction, you can't control it for one simple reason: You have no other territories. The conquest of all your territories in ETW results in a "game-over" situation with the consequence of having ALL your armies disbanded. Another army of that nation will spawn again only if the repression in that country is high enough to trigger a revolution.
The only way to start playing with an emergent faction is perhaps to edit the files in a way where you assign that emergent nation with a territory (i.e: assign Scotland to Scotland). Maybe this way you'll be able to play with the emergent nation you're talking about.
I believe you can, in fact, create a rebel army for that emergent nation of yours, but you will not be able to control it, even if he succeeds in capturing his target region and starting a new country.
I'm not sure if this is 100% right, still, I strongly believe you can't do that for the reasons I mentioned above.
