This is my standard.
1 General.
4 Cavalry.
4-6 Missile infantry.
6-8 Line infantry ( spears or sword or axemen with shields generally just higher defense rated men that will hold a line together when under attack. ).
2-4 Shock infantry.
0-3 Artillery ( only when im on a rapid expansion so i dont need to waste time building towers. ).
Then my standard formation is Line infantry in a 3 rank deep line.
Missile units begin infront of the line skirmish mode off then fall back behind my line when enemy closes in.
2 cavalry on each flank.
General behind missile units.
Shock infantry behind the far left and far right missile units.
3 Artillery right at the back.
As you can see im not much of a cavalry man.
I know how to use them but in general im just more adept with a heavy infantry army.

Can you give examples of shock-units vs. Line infantry?
Line units are things like armored seargents.
Units that are strong defensively so will be able to withstand an enemy charge without your line breaking and then will put up a strong resistance by themselves enabling you to keep most of the enemies forces occupied trying to breach your line.
Shock troops are things like danish axemen they have very little defense but huge offense so when they hit an enemy's flank or rear they will cut it to shreds in a very short space of time.
There effectively berzerker style units mostly men with 2 handed weapons so if attacked they die quickly but when they do the attacking they will cleave the enemy unit to ruins.
So they perform flanking attacks.
Cavalry hold your far flanks and drive away enemy cavalry or missile units.
Missile units fire over your line so if the enemy has thrown to many infantry onto your line then you can focus fire on the enemy infantry not immediately attacking your line to weaken morale.

My forces have been infantry based, but after some recent battles on VH difficulty where I've decimated superior forces (superior in both size and quality) with 3 or 4 units of cavalry, I'm going to start using more.
I'm thinking of something like this for field battles:
1 General
2/3 Light Cavalry
3/4 Heavy Cavalry
4 Line Infantry (Spearmen)
4/5 Heavy Infantry
2 Shock Infantry (Billmen)
2/3 Missile Infantry
depends who you are fighting.
but I usually go with crossbow/archers and spearmen for my infantry.
Light and Heavy Horses -- and I bring a fair number.

6 pavise xbows
4 mounted sergeants
4 Knights
1 Family Member
if Its a siege, and I'm attacking, then I use those DFK type units -- or heavier infantry.
something like this -- if I face a heavy slugger faction, i reduce the number of light cav and bring more dfks quality units.
It depends on which faction you're playing as well.
With an archer heavy faction like England, you can get away with a lot of archers.
I like to stick with a line of regular troops in front with archers that fire in front and then run back, and behind the regular soldiers I have the heavy soldiers ready to charge in if they are needed.
Things I trust more than American conservatives:
Drinks from Bill Cosby, Flint Michigan tap water, Plane rides from Al Qaeda, Anything on the menu at Chipotle, Medical procedures from Mengele
4 units of cavalry, preferably 2 heavy units and two medium- or lightweight
10 units of infantry -
--> 3 stormtroop units (chargers), 3 fighter units (for example swordsmen, but heavy spearmen works too), 4 units on the flanks (can be anything from lightweight to more fighters to additional chargers - they´re mainly there to protect the flanks and engulfing the enemy once the main line has engaged them)
4 units of missile troops, preferably long-range and with a mix of crossbows, bows and guns
2 units of artillery, preferably as long range as possible (or catapults if you´re not planning to siege any citadels with the army)
Something like that, I´d say, without complicating it by naming any specific faction.
I recruited an army like that in my latest egyptian campaign, and it´s done very well in conquering its´ way through several battles across the islands of the western Mediterranean (in the biggest battle I only lost 53 men because the chargers and fighters broke and routed a large sum of Dismounted Norman Knights, and cracked the enemys´ center line, surprisingly quickly)

As said before, it depends on which faction you use and whom you fight, but, of course, also on whether it's a field battle or a siege. Most armies proposed here are useful for field battles, but for sieges I would recommend:
- focus on heavy inf that can win the walls
- art only in areas where the distance from city to city is small (rule of thumb: you can reach the next city within one turn with art). Otherwise, you lose more time on the road than you save during the siege.
- some cav to chase down routers or withdrawing troops (esp. for attacks on castles with 2 or 3 layers of walls)
- possibly some spearmen to stop enemy cav from charging thru gates - but if enough cav is available, then there is no need for spears.
- No missiles troops. They are - probably quite unhistorically - useless in sieges because they stand no chance against missile troops on the walls and towers and just get wiped out.
For me I use two main armies.
Field army:
1 General
1 Heavy cavalry (to accompany general)
2 light to medium cavalry (to provide support on flanks if needed but still fast enough to chase fleeing units)
6 line units (normally spearmen)
4 heavy infantry (to back the spearmen when overwhelmed)
6 missile units
Siege/expansion army:
1 General
1 Heavy cavalry (to accompany general)
4 siege units (cheap soldiers to push siege towers and rams)
6 spearmen
6 heavy infantry
(these two split into 3 attack groups composed of 2 spear units and 2 heavy units)
2 siege engines
Cookie cutter armies really depend on the nation and tech(early, middle, late). Cookie cutter, by definition, is the generic best of what you have, since each nation has different strengths and weaknesses each nation has a different cookie cutter build. You also need to take into account things like your opponents, economic status(heavy on expensive elite units and cavalry, or need cheaper variants and more infantry based), how long you have to assemble your army, etc.
