Other than lightening your wallet so you can run faster - not in my experience. We tried changing our diets to non-gluten, non-lactose in a desperate attempt of improving my daughters condition, but to no success. It meant that the yummier kinds of pasta and pizza was out of the question (sadly). We did try some interesting alternatives like spelt (Triticum Spelta) bread and buckwheat boiled like rice, but we did not experience any significant health increase. I guess other factors than gluten are more important to the overall health and digestion. (well unless specific intolerances)
From a veterinary perspective absolutely, humans? A little but not as much.

I'm on a gluten-free diet. I say gluten-free it's more 'food free'.
