Wow battles are actually challenging now!

I'm seeing the AI playing quite well, it still charges its general into battle (any way to fix that??) but other than that, it's flanking with its cav, and maintaining a cohesive formation pretty well.

One question... how do I recruit triarii and principes? I'm only seeing the option to get hastati. I haven't played RTW in a looong time though so I can't really remember, but I checked the buildings and I don't see one that allows the heavier infantry units.

You need the Provincial Barracks to recruit principes and triarii. It is unlocked after a town reaches 6000 population and you build the Governors Palace.

you start the game only able to recruit hastati. Only capua will have a pop size to let you build the barracks, and you need to build a governors building there first.
