I'm sure anyone using a Hoplite/Phalangite army has expirienced an issue when you order an attack the phalanx turns into a disorganised clump of men.

Basically, we must distinguish hoplites and phalangites.
Hoplites
These guys have large shields and shorter pikes. Thus, enemies can easily get through to them, but they are better in hand to hand combat. They are poor swordsmen, but bearable.
Phalangites
These guys have longer spears and almost no shields. Thus, it is harder for enemies to get to them, but when they do it is easier to kill them. They are terrible swordsmen.
As for tactics:
- When attacking with guard mode on, just click on the enemy unit and they will be prodded by your men. Not very effective, but at least you stay in formation.
When attacking with guard mode off, click behind the enemy. When your guys make contact, you can order them to stop, and they will attack.
However, the easy answer is simply not to use these guys to attack - use swordsmen or cavalry (unless you're the Greeks, in which case use Spartans)

When you get out of formation, just press backspace and re attack the unit.
i use phalanx as part of anvil and calvary with light troops acting as hammer from sides. Basically Cannae against AI
easy answer: don't attack with a phalanx. make a perfect circle, pikes out, and let them fall. or make a line and let them fall. basically let them come to you...and let them fall. attacking opens up flanking oppourtunities for your opponent, and that is particularily devistating with these guys...
