AOR
Is it the AOR that is stopping me recruiting anything but levy spearmen in anatolia when playing as the KoJ? I don't think ther would have been a wider range of troops available in this region if the KoJ or a crusade has taken over this region.
Also to save me opening another thread is it typical for Armenia to struggle and need propping up? It's weird because even though I have been giving them money they keep sending out really small armys to fight the romans.

AOR causes you to create regional troops in non core regions. In all regions are 2 (different) units available. You can create other units in India, Kurdistan, etc.
I don't like AOR so I removed it.
Armenia should not fight against the Romans, because the Romans tend to eat everything in their path. The problem ins't the Armenian economy, but the Roman stacks that are spawning everywhere. If you wan't to stop the romans, think about declaring war on them by yourself or give them a lot of money evey turn (about 10.000).

AOR is good only if there's a large variety of regionals available to replace at least a good part of national roster that isn't available there. So you go to conquer particular regions to draw new troops from there that might somehow fit well into your general strategy in the battlefield.
BC AOR doesn't work well because there aren't enough regional units assigned to it.
