Gallipoli is my favorite, most other movies from the period don't really interest me as I find the conflict somewhat boring.
Passchendaele is a good movie, but be warned that most of it takes place on the home front, and the romance plot is central.

It was weird in the 80s when period films had electronic soundtracks.

About the balkan front and french trench "cleaners" is rather good too.
There is also "Grand illusion" although it's not really a war movie as a movie set during the war. It's set in a prisonners camp in germany and deals with patriotism and differences between social class. A true classic.

It is also not really a war movie, it is set in 1920, the protagonist is in charge to try to find the remains of missing soldiers and also is in charge of finding a suitable candidate for the unknown soldier.
There is also "Wooden Cross", i really liked the book, there is an old movie adaptation but i don't know if it's good or not.

As was said, The Dawn Patrol is a friggin classic. THe transforming planes can be a little weird for modern eyes, but all of the flying is genuine, and the flying sequences are amazing. Not to mention the story, which is timeless.
Hells Angles is also neat, but only from an action standpoint. The story is awful. Fast forward to the flying bits for the good part.
The Dawn Patrol is really good.
The Trench (1999) is like it's title says, about a trench occupied by the British. I thought it would be hardcore action, with the Brits losing the trench to the enemy, then fighting to re-capture her from the Germans and so on.
I was wrong. Only important action is at the end of the movie.

Oh I forgot about Zeppelin...I liked that.
And Dr. Zhivago - can't beat the scene when the deserters march past the new recruits going to the front. I liked the TV drama they did in the UK a few years back. That was pretty good too.
