What campaign is the most fun to play?
I need something challenging but not impossible.
I'm talking about vanilla; don't suggest mods.

Try to win with Parthia. I tried a few times, but didn't succeed, even if I did beat some of Egypt's stacks, they just kept coming and I got overwhelmed. Plus you have negative money quickly.
I just started Germania on H/VH and it's pretty good. Some of the best troops, but you run out of money and population really fast... Pretty fun so far, but I am about to start fighting the Romans so we'll see, lol.
I've also done Carthage which is an even bigger challenge, because the Carthage troops basically suck until you get city level (Not including the elephants of course.)

Numidians hands down. Any faction up near Gaul is relatively easy to win. Persians are doable with their HA. Persians and Scythians are among the easy factions O.O

Persian Empire was defeated by good ol' Alex, remember? Parthians were another Iranian tribe from the north of Iran (Iran = land of the Aryans, in case you hadn't noticed) who eventually came to be the "successors" to the old Achaemenid Persian Empire when they conquered a large part of the Seleucid Empire. Mind you, the Parthian Empire was never as large as the Achaemenid Persian one.
Later on, the Parthians were overthrown by an internal coup organised by the Persian Sassanian line, becoming the Sassanid Empire. This is basically the 2nd Persian Empire, and the one featured in BI. While the Parthians had relied almost only on cataphracts and horse archers, the Sassanians were known to field all of that plus elephants and loads of infantry with a few heavy allied infantry regiments that could go toe-to-toe with the Roman legions (Daylamites, Sughdians, etc).

Although the Parthians in RTW do have an advantage amongst those in history;
Their eastern border is 100% secure - in history that wasn't the case

I know you said Vanilla, no mods. but does a slightly modified vanilla count??
Because if it does, I would suggest 2 factions:
1) Macedonia. Whale of difficult battles in the beginng against Thracians and Greeks, and when you can field your top-tier units, Rome has come along, making for an interesting match.
2) Armenia. All I want to say is: You will need every bit of tactical and strategic genius to survive. Good luck if you try.

Go Seleucid, they begin sorrounded on all sides. Plus initial roster is not that hot.
I don't know the specifics. I know that the Sassanian royal line was Persian. Whether it was 100% Persian, I really wouldn't know.
Numidia is bloody insane. Spain is also a good choice. Crap infantry, cheap but weak cavalry. Their only good units are Scutarii and Bull Warriors. And out of them the Bull Warriors are the only decent troop comparing them to other factions units (specifically Roman units)
I was once an Angel of Total War Heaven, but gave up my wings for a life on the sea of battle.
I hear the Rebel faction is extremely hard to win. But you have to do a slight mod to make them available.
