Default Do experience affect artilleries at all?

Other than the unit's melee attack and defense skills, does the experience do anything to improve its ability to shoot? Like increased accuracy?

Yes, increased experience grants increased accuracy to all ranged units, even artillery.

    Do they reload faster?

I've tested this before and I can say they become somewhat more accurate, not too much of an effect, but they do not reload faster at all. It's frustrating when you have those massive trebuchets and no ability to make them reload faster.

Not true. You can change the game speed.

Jon had taken Donal and Benjen’s advice to heart: Sam may be fat and pathetic, but he is still a member of the watch, and one of the few black brothers who isn't a rapist or thief. (out of context, this sounds ridiculously racist)

I kid you not, I had a bug the other day with Stainless Steel that had me play an entire battle in 6 times the normal speed. Hilarity ensued.

All of my bugs are of the game-crashing variety, you lucky bastard.

Huh. I've heard about this extra accuracy thing, but I've also heard that accuracy is determined just by projectile type and weather.

It's not determined just by those two factors, but they are determined heavily by them. I'm not sure about projectile type, but I know for a fact weather affects missiles.

The weather conditions affect accuracy indeed. Poor weather makes for poor eye-sight, which makes for poor accuracy.

However, the type of missile also changes accuracy. It“s simply like this: flaming arrows are less accurate than regular arrows - I don“t think flaming or normal missiles affect the accuracy of artillery though, since they seem to be hitting their mark in the same manner anyway.

Anyway, with experience, whichever ranged unit will still fire with more accuracy.

hmmm in RTW the advisor clearly tells you that flaming rocks are more innacurate then regular ones and you can notice it too because it's pretty obvious they are; maybe they did the same thing in M2TW ?

    Probably, as Kevindrosario pointed out.
But in my experience, most artillery pieces seem to be hitting their target roughly as "good" regardless of whether they use flaming ammunition or not.

Since it makes such a small difference, I like to put some artillery to fire flaming ammo, and having some others fire regular ammo. Depending on the situation of course - flaming ammo is always best against troops...

Taken straight from descr_projectile. Lower numbers means higher accuracy.

Spoiler Alert, click show to read:
    Catapult
    accuracy_vs_units 0.0625
    accuracy_vs_buildings 0.0500
    accuracy_vs_towers 0.0325
    Flaming Catapult
    accuracy_vs_units 0.0625
    accuracy_vs_buildings 0.05
    accuracy_vs_towers 0.035

    Trebuchet
    accuracy_vs_units 0.075
    accuracy_vs_buildings 0.05
    accuracy_vs_towers 0.0305
    Flaming Trebuchet
    accuracy_vs_units 0.125
    accuracy_vs_buildings 0.075
    accuracy_vs_towers 0.055

    Ballista
    accuracy_vs_units 0.005
    accuracy_vs_buildings 0.05
    accuracy_vs_towers 0.025
    Flaming Ballista
    accuracy_vs_units 0.01
    accuracy_vs_buildings 0.05
    accuracy_vs_towers 0.025

So flaming catapults are less accurate versus towers but not buildings or units. Flaming trebuchet shots are less accurate against everything. Flaming ballista shots are less accurate versus units but not towers or buildings.
