I think it goes down with them, actually. I don't have any proof, but that would be the logical thing.
I think ammo does die when archers die. Otherwise, you would be able to have a single archer that can fire 1800 shots, which clearly doesn't happen.

Well that's the thing, I was in a battle, I had 18 archers that seemed to have been firing for a long time. Also whenever archers die, the bar doesn't drop, so it either stays, or its being scaled down.. Dunno
The fact that the bar doesn't drop when archers are dying means that ammo is dying with the archers. The bar represents the average number of shots left per archer. So if ammo remained while archers die, the average number of shots left would actually increase.
I guess that;s what I was tying to say by "scaling it down"
Each archer has 30 shots. That bar is how many arrows everyone has on average, I think.

I just ran a little test and think I figured out a couple things. So first what I did was go into EDU and edit the Skythikon unit to make it a bit easier to test. First, I increased their morale to 30 so they wouldn't rout when I charged them straight into pikes. Next, I reduced their arrow count per unit from 25 to 6 so I could test it easier.
Then I did a battle with a unit of Skythikon vs. Scottish Pikes. I let the Skythikon get off about 5 volleys at first so each unit should have had about 1 arrow remaining. Then I charged the Skythikon head on into the pikes to reduce their numbers from 80 to 4. After that, they should have had only 1 volley remaining. They got off another 18-19 volleys.
So I think there's two things that can be deduced from this
1. Arrows do not disappear when archers die
2. The blue bar does not represent average arrows per archer. It represents total arrows in the unit.

It makes sense, I always noticed that when I started out with a group of missile troops -- especially something like Polish Nobles / Jinettes, the full size units would expend all their ammon while the half-size units would still have some ammo left by the end of the battle (even tho both units are used together and evenly).
same with sieges, multiple units of archers on the walls and the smaller units always seems to have some ammo left long after the full-size runs out.
so this means that if your archers are in a safe place (behind your infantry) it doesn't matter much if their unit is half depleted, because they'll get to do as much damage as their full strength variant ... that doesn't sound entirely realistic ... and makes you think about your retraining priorities ...
