I read that there is good evidence that the Exodus from Egypt took place at the same time as the Santorini eruption
about (1600 BCE).The first Jewish king (Saul) shows up about 300 years after the Exodus. This would place Isreal in the late
bronze age. Right?

Not really to rabbinic judaism the date of the exodus will be 1312 B.C.
However Edwin Thiele placed the exodus during the reign of Thutmoses III around the starting age for this mod. Others theories make the isrealy the ancient Hyksos that ruled over egypt and were expelled around 1550 B.c. by the rebels or nationalists of Kahmose and Ahmose. So using ancient Israel will be hard however it's possible. If you are going to use them just place them on the negev. However if you decide to use them you should also use the old kingdoms of Moab, Edom and Amon.

Early Hebrew are a typical Iron Age culture, i dont remember exactly the first archaeological findings that are related to them but they are no way there at 1400s, that date was calculated from biblical genealogies i think; the teory making them the Hiksos is not very healthy today even among maximalists. The Merneptha stele is dated at 1210 BC but we have no archaological evidence of what the Stele is referring to when he speaks about "Israel" except that the determinative of "Ysiriar" speaks of a tribal or state-less people, that would be compatible with the period of the Judges (tribal leaders) told in the Bible.
Sonny added Semitic Tribes that are what were in Palestine by that time of formative period, that seems correct to me as archaeological findings dont show any distinct culture in that zone by that time. But i really believe that put them as a separate political entity could not predate the early iron age.
