I like to disable the building of all "Peasants" in RTW - but could not find any help in the "How to" list for modding.
Is there an easy way to do this? I am a novice when it comes to modding.

Someone may correct me if I'm wrong, but I beleive it's a simple as going to the export_descr_buildings file and removing the line in each building that would creates peasants.
For insance, there should be a line that looks something like this;
}
governors_villa requires factions { barbarian, armenia, romans_brutii, egypt, romans_scipii, carthage, parthia, numidia, thrace, greek_cities, macedon, romans_julii, seleucid, pontus, romans_senate, slave, }
recruit "barbarian peasants" 0 { germans, gaul }
Then just delete the line that says
recruit "barbarian peasants" 0 { germans, gaul }
It's won't look exactaly like that in your file, since I've got a modded version of the game on my PC, so I didn't copy/paste it. But you'll see what I mean once you look at the file.
Oh, BTW. The export_descr_buildings file is in you data folder, WAY at the bottom.
A better suggestion is to comment out the lines rather than removing them. That way you can see where the gaps are in the build queue, or easily unmodify, etc.

Aaaahhh that would explain it. I too wanted to disable peasents, but instead I deleted them from the export_descr_unit file and the game crashed... so I put them back in. Useful thread to newbies like me, I'll give it a go. Cheers.
