I think its something like
remove_trait "name of the character" name of the trait
Been a long time since I used it and I remember finding the name of the trait could be a pain sometimes.
I'm know that command, but when i type remove_trait this( or the general name) Alcoholic , it doesn't work ( it worked for some traits, though )
You need the console name of the trait, i think alcoholic is SocialDrinker or something. As ichon says finding the actual name can be a.

remove_trait this Drink
if that doesn't work, then
remove_trait this "Drink"

other craptacular traits are: Deranged, Inbred, Arse, OldMerchant, ReligiousMerchant, Cuckold, Coward, BadTrader, BadBuilder, the list goes on, thankfully they removed the ingorant trait, that was all over the place in vanilla, regardless of what you did.
