In Kingdoms, your troops have much lower stamina at higher difficulties (especially VH), except maybe in the Americas campaign. Do AI troops also have much lower stamina, or is it just the player's troops?

Just the players. It's to increase difficulty for the player against the AI. If everyone gets the same decrease then everyones on the same footing (no disadvantage for player).

Well, if everyone gets the disadvantage, it would still disfavor the players, because player's armies generally have to fight armies that are larger or have to fight against multiple stacks, so players inherently need more stamina.
