Hotseat. If you get bored you just switch factions. Or take over endangered once and save them from the brink of destruction inbetween.

myself prefer the ones that start small, but if u whant something unpredictable, challenging and pretty much tough, u can have a campaign as the HRE, beign attacked by all sides really doesnt help...

Venice (early or late I guess, I play early) is pretty fun. You can go anywhere you want, nice roster with lots of sturdy militia. No money problems, either
That depends on what you're lookin' for. If you have a deep historical interest in a faction then I can almost gaurentee it will be interesting to you. For unbiased campaign experience, myy preferences are as follows (please note that all of the following are meant for the late campaign, because I prefer the late campaign).
The Eastern Roman Empire (Byzantines obviously) have been consistently fun for me time and time again. Their challenging (late) starting position, interesting and unique unit roster, religious difficulties, and underdog status are always fun for me. It's also interesting being pitted simultaneously against the most diverse group of enemies to be found in SS (Venice, Hungary, Seljuks, Fatimids, and all too soon the Mongols). Of course I'm a huge fan of all things Roman, especially after the 2nd century, so I'm hardly an unbiased source.
Crusader States snag my number two spot, for their challenging starting position and awsome units, plus the fact that they didn't historically last long.
Venice gets to be number three, largely because they have every late technology in abundance, and because they can go anywhere.

choose a faction that you are historicly familar with eg. if you are intrested in the history of the platengent blood or the capet royals of france, doing this you will certainly not be bored
Kingdom of Sicily and attack the Roman Empire. Achieve the vision of Robert Guiscard and his son Bohemond, and the kings after them - to become masters of the Empire
Genoa and Turks have been my most fun campaigns. Genoa fighting both France and HRE can actually be rather tough in late campaign while Turks is simply amazing if you Jihad southern Italy and sell it to CS. Then you get this nice 4 front war between ERE, CS, Fatimids, and K-Shah. Running around in Persia and Anatolia fighting archer hill battles and trying to beat CS on the plains when they get reinforcements from S Italy.
Late Kwazhamir for sure, at least if you cruisade all your armies to take over Germany and sell all of your old lands to the Turks\Famids.
sounds to me like you need some submods to make the game more challenging.
in my eyes, the harder it is to win with a faction the more fun it gets in during the campaign. if all u have to do is steamroll the enemy after beating 2 or 3 militia stacks and your empire triples in size before turn 30, then of course there ain't no reason to continue much further, since you then have nearly unlimited money and troops at your disposal so beating an entire nation in 2 turns becomes possible.
as for my most fun campaign it would be Genoa, crappy early rooster and no castle, depends on how many ppl i make alliances with. i only chose to keep war out of italy so aragon, castille, france and germany came soon for my neck.

Allied with Kwarezmians. Took Edessa and Antioch. Vassaled the Crusader States. Pushed Byzantines out of Anatolia. Got a ceasefire. By turn 30 I was bored as hell...
Turn 72. Egyptians destroy CS. I go to war with them. I got from them Jerusalem, Gaza and Kerak.
Now the Byzantines attacked. Pushed them back easily.
I got money. I can make a lot of troops. I could steamroll in any direction. But I'm too bored with it!

Thought SS 6.4 would already give me that challenge. I've only been playing SS for a week now.

use some AI sub mods eg. soulsons and really bad AI. or maybe you should just try DLV where the campagin is heaps hard or dominon of the sword where you have like 5 rebel forts in each region
