    1. Assuming the enemy doesn't sally forth you need mostly good heavy spearmen and good heavy infantry (dismounted knights come to mind). Also, artillery are recommended depending on situation. Basically if the enemy has lots of heavy infantry and therefore will make your fight tough on the walls it might be better to blow holes rather than take the walls with ladders/towers. Don't overdo it on artillery though, only have what you need to blow the holes you need.
A couple of archer and cavalry units aren't needed, but they can prove handy in some situations so they're good to have.

2.My version is completely different than yours (6.4), but I don't mess with the cities/castles until I have secured a good part of the front. If a castle is a very long time away from any front I convert it to a city.
I've never converted cities to castles except in vanilla, the 2 easternmost cities so that they would make troops against the Mongols.

4.right click the walls upgrade building for a city or the castle upgrade building for a castle. Somewhere in there it says "number of free upkeep units: x", x being a number

Heavy infantry are best for sieges, although you'll want to send them behind the van, not as the van, or they'll suffer a lot of casualties. Castles Are much easier to defend than cities, so use them realistically, as a way to maintain your holdings. As the Crusader States, you'll be fighing a lot of armies with horse archers, meaning you won't want to fight them in open-field battles. Again, make use of your castles. I think free upkeep is related to the number of troops a city can recruit per turn, but sometimes that number is exceeded by 1-3, depending on upgrades.

Did your CS campaign fail? That isn't an easy one to jump right into, which no one mentioned, but it sounds like you found out the hard way. I'd try England, since you generally don't have to secure very many borders and can pretty much ignore diplomacy.

What are the disadvantages of not having a governor in a city?

What are the disadvantages of breaking a ceasefire?

What do the 4 stats of a general exactly mean?

The city will generate less money and population growth might be lower, depending on the governor's attributes (people don't like living in cities governed by dreaded dbags), if you don't have a governor. Also, when you govern a city the general is given a specific ancillary and they often boost stats, but not always.

Breaking a ceasefire will lower your faction's reputation, making it harder to make future deals and making countries more inclined to randomly attack you.

I can't think of the four stats off the top of my head, but command pertains to battlefield command, as in how well troops respond to your commands and how likely they are to fight or retreat; authority is only for your faction leader and it's like command but it pertains to the whole faction, so whether or not armies will rebel, amongst other things; chivalry or dread will either make the people like you or dislike you and, as I mentioned, more chivalry will increase population and increase your reputation while more dread will make your enemies more likely to flee from the battlefield; Loyalty affects the likelihood of a general to rebel, so if a general doesn't have very high loyalty then you probably don't want to give them very many soldiers.

Piety is like Managment in RTW - it increases the settlement's income through Administration (settlement details panel). In SS it is renamed to "Donations". Piety is for monneyz!

Nah, donations barely make any money. I find them very insignificant compared to trade income. This also goes for Rome, if I remember well management income was too little so often I preferred a governor with a trait that gives like 5% bonus to trade rather than 5-6 management.
