I think the costs are pretty much divided up according to unit type, militia and untrained peasant-type units (including highlanders and units with name "Peasant X") typically have upkeep of 100-125 florins, semi-professional units typically have ~150-200 florin upkeep, and feudal/knightly units have 250+ florin upkeep. In terms of training, most untrained and unarmored units with shields cost ~300 (spear militia), untrained, unarmored, shieldless ~150 (pike militia), and so forth. I don't think CA considered unit rarity, it seems that unit costs reflect the aforementioned basics, and figured out the cost for swapping and replacing weapons, armor, shields, training, and so forth. I'm sure someone with the time could plot out the recruitment costs and compare them based upon armor, weapons, shields, training and other factors and look for patterns, but that sounds time consuming and only for someone serious about cracking CA's system and using it to create new, balanced units.

Generally unit upkeep costs are implied by the economy and the amount of armies you want to see.
