Not sure whereI can ask this. But is there a way to change the High Elves bodyguard unit. I prefer Elronds BG unit over the Mounted Nobles a direction to where I can change this would be helpful

That's pretty easy, I've done it myself without any special modding skills. Go to descr_strat file in the data\world\maps\campaign\imperial_campaign folder, scroll down until you find the general with the bodyguards you like. Copy the very first line of the units. For example:

Then you go to the line with the general you want to change, e.g.:
Spoiler Alert, click show to read:
and replace the first line with the line you copied. So it should look like this:
Spoiler Alert, click show to read:
Now Elladan has Elrond's bodyguards as his bodyguards (that doesn't remove Elrond's bodyguards though, they both have the same bodyguards). You can do this as many times you want with any general.

now how would I do it for all High Elf Generals (I.E Adopted, Coming of Age, Man of the Hour)

In Export_descr_Unit in /data folder change the following:

in the attributes section remove the ', general_unit' and add it to another unit like say Elf Spear.
Spoiler Alert, click show to read:
make sure only 1 has ', general_unit' or your game gets all messed up.
at least it seems to be that way :p

Yeah, thanks for the info, although I prefer to have mounted generals instead of dismounted (they are far too slow).
I've actually tried this while installing Taro's submod, in which many generals had dismounted bodyguards. I've tried to change that and also add some more buildings to my undeveloped towns. Result: whenever I pressed the start camapign button, all my settlements have gone rebel, the "victory conditions failed" window popped up and the game went back to the starting menu! There goes my first attempt to modding!
Fortunately I kept the original files as backup and it worked the second time (though I'm not doing this again!)
