How to Change Rebel Spawn Units
Can anyone please point me to the tables and fields needed to tell the AI which units are available for spawned Rebel Armies?
Can these custom AI spawned stacks be assigned to specific regions or factions?
(IE: I want a specific set of clan units to be spawned by the AI when a rebellion occurs in a particular region, not all of them)

The table that determines which units are available to which faction in a rebellion is faction_rebellion_units_junctions. As for you second question, I don't think there is any way to make a rebellion for a specific faction and give them some specific stack of units, unless you want to make it a scripted event or something. But then it would occur on a specified turn, not whenever a rebellion happened to appear in the province. That's my knowledge on it, anyway.

Man, I have searched high and low for all of the possible tables and scripts that control which units the AI picks when there is a rebellion in a region but I just cannot find them all apparently.
I have adjusted the units in all of the obvious places: Startpos_regions, faction_rebellion_units_junction, LUA file, etc. but I still get troops other than the ones I want to show up in rebellion stacks.
Does anyone know some other places that I can look to fix which units are available for the AI to pick for a rebellion stack?
