I have seen many Medieval II screenshots of battles where there was much less UI on the screen. I was wondering, how do you do that?

Either they cropped the pic or by pressing esc in the battle, you have the option to remove it.

I don't mean removing it, what I mean is having less of the UI. For example, one of the screens I saw, all of the unit cards were stacked horizontally on the bottom of the screen, and were not enclosed in the UI box. The different command buttons were on the top of the screen.

When in a battle map, hit "esc" and look for the "UI Options" button. From there you can select what is shown.
