How Do I Remove Units From The Game?
Let's assume I don't want to face Trolls any more and want to rid them from the game. Actually, I want to start a new game and steam-roll through it by removing enemy missile units and trolls.
I am assuming it MAY be a case of simple removing the entries from a particular text file.
How do I do this?

it's not that easy, but it's far from complex you have to edit about 3 different files IIRC... the descr_strat, export_descr_buildings, campaign_script

Deleting the unit entries from export_descr_buildings (or just putting ";" right before the lines) is enough to make units unrecruitable although any scripted spawns will still work as before. Still, those are relatively few compared to what gets recruited throughout a campaign.
Use this guide to familiarize yourself with the EDB. It's not complicated at all, just a tad bewildering at first. The guide explains what each section and command line does.
