I've tried all kinds of things, and they still take over the whole of India before halfway through the game, and then invade Europe! Playing Prestige Mode becomes pointless because you just can't keep up with the Orange Plague.

So, drastic situations call for drastic measures. I want to nerf the Maratha faction's AI. Would I be right in thinking that if I change their AI profile in startpos.esf to MAINTENANCE, or whatever the minor factions use, that this would at the very least keep them in India?

This is an good fix in first instance. You can also set them to minor which would decrease the money the would earn each turn. The last what you can do is to raise their upkeep costs.

I may well go for the Minor Faction route as well, even with MAINTENANCE they're still getting the best of the Mughals. I started a new campaign as France to see how they performed, it's 1716 and they just took Bengal from the British.
