Would this work?

Not that I'm gonna do it, just thinking, If I wanted to crossfire it, and since that model is out of stock, would it be compatible with this card?

Yes, but you won't have the ability to use the 2GB on the Eyefinity edition (would be limited to 1GB).
As that's the case, you'd be better off buying a cheaper model, like this.

Multi-GPU configurations forces the cards to share bandwidth.
So if you have two cards with a different memory size, CrossFire will utilise the highest amount of memory that is available to both cards. In this case, 1GB.

You are better with a 5850 in Xfire really.
