What is the best tactic for two handed swordsmen, eg highland nobles, zweihanders? Are they like billmen and can slice through cavalry?
No, they're shock troops. They're the ones you flank around the side while something like dismounted feudal knights or spearmen hold the line and then charge into the enemy flank to break them. They're actually quite weak against cavalry, meanwhile having a bit of a bonus against infantry.
Yet I'm not sure if they totally fixed the two-handed bug yet, so it might not be worth commiting them to a slug fest.

According to CA, these troops were used as flankers. Because of the slow - vanilla game - animations, they will suffer in a face to face fight, so use them at flanks and rears of enemies.
However, for flanking, every unit is good and since 2handers are usually not cheap, it is best to avoid them from economics point of view.
Use cavalry instead.
2 Handed Units are way underrated in this game. They are actually quite useful for many situations. They can mow down cavalry pretty easily, and take on armoured units such as dismounted knights pretty well, especially if with 2 handed axes, even if they sustain some losses on the process.
Just don't let them be charged at or stay under ranged fire for long. Use them as shock troops, when you have a pitched battle where neither side yields. Charge them in watch the enemy casualties rise up, then watch their rout.
Basically, they are specialized units. Kind of like cavalry, cavalry is weak too if they are in a prolonged melee, but they are perfect for that timely charge against that unit that lone enemy unit out of formation or to cause some serious damage on the enemy when in a difficult melee fight against your other units.
Not sure about vanilla because they're bugged but in SS two-handers are real tanks. I feel like their purpose would be to take down the heavily armored dismounted knights because their attack is much better than other knights. Cavalry usually doesn't charge well into heavy inf. and this is mostly speculation.
