We all know that fighting the Mongols can be both difficult and tedious. And while horesarchers are bad, the armies with the trebuchets are the worst, in my opinion. A few trebuchets can easily cancel every advantage you might have through bridges og citywalls.
I have discovered what, I hope, is an unknown method of regaining the upper hand.
Take 3-4 cavalry units (they don't need to be full), and attack the mongol army with the trebuchets. Yes you heard me. Attack a full Mongol stack with only 3 cavalry units.
Now, when you placing you're units before battle, position them where you know the holes between archers and the wide horsearchers, will be. It will look something like this:

---------you --------------- you
I hope the illustration makes sense. When battle begins, immediately run the cavalry through the gaps, and double back and charge the trebuchets.
Now this might take a few tries, and it certainly isn't easy, but you can make it a lot easier if you can spare a generel for the job. Simply place him at the front line and as soon as the battle begins, run him towards the corner farthest away from the enemy. This should result in him being chased, and the AI simply dosen't care about neither you cavalry nor their own trebuchets. When the trebuchets are done for, your general should be in the corner with all hell about to crash down upon him. At this point, you just flee him off the field. Result: no more enemy trebuchets, and all you've lost are a couple of cavalry units. More than a fair deal, if you ask me.
