What I love about medieval is that the more the fight and the more they command the better my generals get. But instead they get scurvy and neumonia. Is there a way to change this?

they lose it after some time, but they may get -1HP traits if they have it for too long, best way is to put them in a settlement

You should make an appointment with a doctor, scurvy can be quite serious.

You can always do that via console commands.
After selecting the General type "give_trait this Healed" OR "remove_trait this trait name here" it should also work for SeverelyWounded trait.

Eat more fruit and vegetables, onions will do just fine.

Or rest in a city with 50% of your religion for a few turns.
