The armour factory makes possible the "advanced plate" armour upgrade.
There are only a few units in the game that can be upgraded with it. In fact, there are several factions that doesn´t have Any units capable of recieveing that upgrade.
If you ask me, it´s not worth the money. However, because I HATE seeing available buildings not being built, I always construct it anyway (after my economy allows it, of course)

You should really only build two, one in your capital and one in your stronghold castle. If they are the same place, well, you just saved 15k.
Capital because generals have the second highest armor, so you should upgrade that. Best castle really doesn't need an explanation.

So advanced plate for top tier knights and generals, but not for all factions. Good point Double A about building one at the capital.
Does anyone notice the difference - movement and effectiveness of advanced plate units? Do the general's or chivalric knight's units take less casualties? None of my Polish units list advanced plate as an upgrade option - should I build it? (The Polish Guard look like they already have advanced plate)
Only the Italians have any units able to get Adv. Plate. And it's not much help. The cost of the factory is colossal for such a useless building. Armor upgrades do not slow down units, but think they make them less effective in hot climates. It marginally increases protection. Polish Guard and Chivalric Knights have Partial or Full Plate, along with some rather outdated helmets.

An armour factory can only upgrade a few Italian units. Generals are not upgraded to advanced plate in Vanilla. For most factions building a factory is just a waste of money.
I think that Double A is playing a mod where more factions benefit from building an armour factory.

Does anyone have a list of which factions/units can be upgraded for M2TW vanilla? Does the upgradeable unit always show advanced plate as the next armour upgrade?
Shasqua says only the Italian units can get the upgrade - Familia Ducale? Any others? Can anyone confirm or deny?
I've always built them, but now I'm reluctant. I must have spent a millions of florins on building them over the campaigns, but now I don't want to unless there's an actual benefit. I couldn't see any difference in the stats, in the battlefield animations, or number of casualties taken.
I'd like to pin this issue down.

Famiglia Ducale
Broken Lances
Men At Arms
General's Bodyguard
Whereas those already have it:
Lancers
Gendarmes
Gothic Knights
Unless you're playing an Italian faction it's not really worth spending 15000 florins for an armour factory.
