I've noticed many AI troops haven't seen combat, but have multiple chevrons.
Known glitch?

I don't think it's a glitch. I'm pretty sure certain buildings etc give chevrons to units like military academy, because they have better training.

Erm..it might be called something different that's just what I seem to recall it being called, but it's a high tier building for huge cities. I think.

Isn't that just the AI getting a bonus?
Maybe they saw combat but were retrained?
Or were part of a crusading army?

Not a glitch, it is part of the ai bonuses/ai cheating in SS.I've noticed many AI troops haven't seen combat, but have multiple chevrons.

Yes, bonuses only apply to the ai unless it is a guild or something, that specifically says it is for everyone.Isn't that just the AI getting a bonus?
Several buildings have bonuses tied to the ai, like order and unit experience. If you want a detailed list, have alook at the export_description_buildings.txt file in the data folder. It is quite large though, and not so easy to read in the beginning.
maybe those units are retrained. maybe the ai defeated rebels armies or towns and retrained those units. i usually build a stack of 10+ units and use it in all battles, that's my core army ( at the begining ). i retrain all of them and when wars with other nations start i usually have a backbone of 10-15 formations with 6+ exp. what i can't make up in numbers i make in quality. have you ever won a battle when the force ratio was 4/1 in favour of AI and a single charge of 2-4 heavy cavalery changed the whole history just because they had lvl 6-7 in exp and they simply crushed the enemy infantery from flanks/back ?

Yeah, they WERE Light men at arms, so that explains it.
