I was just wondering, In RTW you can use Sapping points, which I thought worked on some form of explosive or something,(correct me if I'm wrong) so why cant they use sapping points in M2:TW?

DAMN RIGHT!
No sapping in rtw meant that your soldiers would dig a tunnel that would go beneath the enemy wall making the ground the beneath it collapse. It was quite overpowered.
I think such techniques went out of use when moats became more common, and in time they were forgotten.
Besides, I think the game is actually better whitout them - they made siege assaults way too easy. No way to counter them. Also, you wouldn´t be able to use them effectively against Fortresses (with more than one wall).
