How do you defeat Elephants?

Sorry to make my first post a cry for help, I have read alot here and tried search but cannot find what I need.
I am playing vanilla turkey H/H and Timurids have just showed up at Baghdad. I can kill all their Silver Chevrons troops (that look like Mongols anyway) but I cannot destroy their elephants. These animals just run riot on the battlefield. Their cannons destroy mine before the battle gets messy, and when I do manage to take out 1 or 2 they just run amok through my troops and destroy me.

So yes I am in need of some help from the wiser and more experienced MTW2 players.
