For me I really hate Pavise and Genoese Crossbowman. I am mainly a calvary player and these units drop my calvary like flies. Plus head on charge does almost nothing.

So besides Hungarin Nobles the unit I hate fighting the most could possibly be Scottish Noble Pikemen, or at least it would be if Scotland ever lasted long enough to requit them. With their heavy armor and good attack power they are the best pikemen in the game and can stop anything coming at them or crush everything in front of them. They are like a moving metal wall of spikey death. The only way to stop them is eather with artilary, black powder units, or the very best archers and crossbows. Anything less and they will just laugh it off.
But like I said because Scotland never lasts long enough to use them we may never get to see what they can really do in the hands of the A.I.

So, if you're ever fighting them, bring along a trebuchet or cannon. I don't see how that's that hard.
I find pikemen are totally screwed when you charge them from behind, because then they take out their rubber swords and/or die. I prefer to use cavalry for this purpose, because they can get away before the enemy can deal with them with another unit.
Cavalry are the answer to everything. Especially if they have bows. Mounted French Archers give me a generalgasm.

All I can say is that Genoese Crossbowmen caused me to start playing as Milan so I didnt have to face them.
Horse Archers or Mounted Javelinemen, they melt me head trying to chase them around the map.
But those Polish Nobles probably do take the biscuit, because if you finally do corner them they fight like Gurkahs and are not piss like Kazaks that fold like origami.

Genoese Crossbowmen aren't that difficult to handle with heavy cavalry if you have about equal number of units. Send one in first as a bait to attract their attention, then immediately retreat that unit when they start reloading and send in the rest of your cavalry to charge.
I hate mounted missile units and I dread sending ordinary units to fight the general and his bodyguards in melee combat.
The generals bodyuard is not very frightening, unless when he leaves his army and start moving around unexpectedly.
My most feared enemies are
All forms of Pavise crossbowmen - they never die in any numbers, no matter what you charge them with, causing them to slow down the process of defeating the rest of the army.
Missile cavalry - annoying to get rid of, and if the enemy has more than two units of these sidethorns there will be trouble!
Artilllery - it´s a strange thing, but the AI seem to have monopoly on artillery crews that actually can aim at moving targets...
I´m also not too fond of really super heavy infantry - Once again, the AI seems to have all the good ones...
