France, obviously because of their unstoppable combination of archers(scots guard, aventurier) heavy infantry (DFK, DCK, DNK) and cavalry (Noble Knights, Chivalric Knights, Lancers, Gendarmes) in late game.
Holy Roman Empire (Gothic Knights and DIK with their awesome maces)
Moors (Christian Guard,mounted and dismounted)
Byzantines (simply because it is a challenge to resurrect the roman empire)

There was another thread like this, but I can restate it. Hungary because of its proximity to so many non catholic nations. Location is very important in my opinion because I think all factions have something good to offer militarily. Hungary is a Catholic faction, so no crusades against me unless I get excommunicated. Even though Hungary is close to the two Empires, I can weaken the Byzantines so they aren't a terrible force. HRE is a problem because the Pope doesn't like me attacking them, though.
I also count being close to the Mongol and Timurid pawn points as a good thing because even though I'm never really ready and waiting when the Mongols show up, I am the best line of defense against them expanding across Europe.
As far as neighbors go, HRE is the only real problem for me. Venice usually remains weak during my campaigns, so as long as I keep Zagreb garrisoned I should be able to keep them in check. Poland rarely gives me grief as long as I let them fight the Russians over Kiev. The Byzantines are strong, but there's nothing to stop me from hammering them as much as I like. I always go to war with egypt due to crusades, but I don't find them hard to handle.
I also like Spain. They make an excellent late game faction with their musketeers and Grand Carracks. Plus they border the Moors, which like the Byzantines I can hammer against with impunity without the Pope standing in my way. England is a good early game faction, and has the safest place on the map as soon as you get rid of Scotland. Not perfectly safe, but still the safest I believe.
