I prefer to take a foothold in France by taking Bordeaux and buying Angers off the French while destroying Scotland. Then take as many French castles as possible before the pope tells you to stop. After that it's easy to mop up the remaining French settlements as they have no castles.

This way your not excommunicated and you have lots of land and trade opportunities. I like to wait until the HRE are ex-communicated and then attack them, gaining pope points when he calls a crusade. After that you have a way to get to Orthodox Russia and Byzantine Empire so you can take them without worrying about the Pope.
