Im playing Castille. But many of my generals do not die in battle but get killed by Moor assasins.

You can use spies for detecting assassins. Keep a spy in an army or a settlement where a general resides. So guard your generals with low personal security. And help them increase Personal Security offering traits and ancillaries. Guard dog Ancillary for example can be gained by a general who resides in a Castle or larger fortification for roughly 20 turns.![]()

Attach spy (or assassin) with your generals is the best way.
Easiest and most straight forward way is attaching a Spy or an Assassin to the General's army.
But a better, perhaps more realistic and more effective (in longer terms) approach is Counter-Espionage.
You can't always depend on each Spy's skills and it's costly to put Spies or Assassins with an army without actively using their abilities of infiltration, sabotage or assasination. You will be putting them on a Guard mission forget about them, their skills will not increase and they'll be useless expenses. And Assassins can still hunt down your General's who have poorly skilled Spies protecting them and also your other Agents can still be targets to assasination.
A Counter-Espionage on the other hand is useful and will greatly increase the skills of your Agents. Train Assassins and start on small missions such as killing Captains or poorly skilled Diplomats or Merchants etc. When your Agent is ready, send them to assassinate the enemy Assassins and Spies. In time your FL will also receive traits which increasing the skill of your Agents and also decreasing their costs. You'll have the best skilled Agents in time and they'll be greatly useful to you later in your campaign.
Think about that.
Yeah, this is it. Some AI factions are active with assassins, most are not. The counter is:
1) Have somes spies in the area where your armies are, illuminating the fog of war, to spot the enemy assassins before they can get to your general. Be sure to check nearby cities/castles as well, for any sitting in town.
2) Keep some assassins nearby as well (preferably trained up a bit already by repeatedly killing a rebel captain), use your assassins to kill the AI assassins, the odds are actually quite good and its very satisfying.
2) You can, if you wish, put 1 spy in each of your general's stacks, or in the city/castle with him. This will reduce enemy assassin's chances dramatically. Note that putting an assassin in the stack does nothing. If your general has a variety of +Movement traits/ancillaries, or is on Crusade or is on a Boat, this can reduce the movement rate of his stack, but most of the time the spy will have more movement points.
