I noticed in one battle I played that the battle report at the end of the battle told me that I lost about 600 men. I had 1300 men in my army and in the same battle report it said I had 1034 men left. What happened there?

After each battle some people recover from their wounds and also if you have a chirgeon(ancillary) on your general more people will heal.

Ah alright. It was weird too because all my Tarantine cavalry had died in the battle and I ended up having 30 of them alive afterwards xD
