Mumakil eat Cav. Literally. You see them munching away on horses. You want alot of men in there. Either way things are going to go flying across the other side of the map. Men are more numerous and can be put in a looser formation. Giving you the greater outnumbering moral penalties.

If you are RK just bring your ballistae with you. One hit from fire boulders and they go crazy and kill half of their army. Use on the start of the campaign, after you kill their starting mumaki they wont build new ones immediately. When you get naval superiority burn the place where thy are built. Its really easy with Numenorians.
As Adunabar or RK, siege artillery is the best way.
Catapults are king. I haven't actually used ballistae but I imagine they would be effective as well.
Trick is, normal boulders are far more accurate than fire boulders, with the disadvantage that they only kill 1 or 2 enemies when they hit, unlike fire boulders which kill all in a certain area.
But since Mumakil are just 2 models in a unit, and very big ones at that, they are easy for normal boulders to hit and kill.
The 2nd option is to panic them with fire arrows.
The 3rd and last option is to mob them, preferably with cheap and expendable spear infantry, since soldiers will go flying and armour and defense won't help them much.

I assume you are referring to Catapults and not Mumakil.
If you are playing against someone with reason, you can still use catapults as long as you have some reason yourself.
Just don't let them auto-fire, and control them so that you fire at the enemies sufficiently far away. And put some infantry just in front of them, so that the enemy can't get to them so easily.
And the fire boulders give panic, as well as damage, something you really shouldn't discount when the melee engagement draws near.
